TEMPLE, Texas — With ‘spooky season’ upon us it was only fair to find something pumpkin-related for this week’s Morning Munchies. One of my favorite seasonal treats is pumpkin pie, so when I found a pumpkin pie smoothie recipe it was a no brainer – I was going to try it.
This recipe is healthy, filling and breakfast-appropriate!
RECIPE
The prep time for this drink is five minutes; making two servings.
The ingredients:
¼ tsp cinnamon
-½ cup pumpkin puree
-½ cup yogurt*
-1 cup of milk**
-1 banana
-1 tbs maple syrup
-vanilla***
*Plain or vanilla Greek yogurt preferred. I used vanilla Greek yogurt.
**Any type of milk preferred. I used whole milk.
***Just a splash of vanilla or pumpkin pie extract.
DIRECTIONS
Add all your ingredients into a blender and pulse until it is smooth or until it is to your liking. If you want the smoothie to be thicker, add more ice. Garnish with additional cinnamon or nutmeg on top as desired.
IMPOPRTANT
This drink is incredibly easy to make, however it did not taste identical to a slice of pumpkin pie. It was more of a pumpkin and banana smoothie – still good, but not expected.
The final product is lightly sweetened. If you’re looking for something sweet, add more sweetener (maple syrup, honey, sugar).
